What do you do when your son wants waffles but your daughter wants pancakes? Make both! Sounds like a lot of work, I know, but guess what? This recipe can be used to make both-win/win!
I usually make this batter on Sunday mornings and it lasts us the entire week for daily breakfasts, and even the occasional breakfast-for-dinner nights. Seal it in an airtight container and make sure to stir it up before each use. Serve with freshly sliced fruit and maple syrup.
Fun tip: add sprinkles for a “funfetti” type waffle.
I had a Braun waffle maker for 18 years before it decided to retire, bless its heart. I did a lot of waffle iron research and replaced it with this Hamilton Beach workhorse that’s been doing great for well over a year. The best part is that the plates are removable and dishwasher safe. My kids love the fact that it spins-hey, they’re easily entertained…Just be sure to hit it with some cooking spray to keep it from sticking if it’s fresh out of the dishwasher.

Wow-'em Waffles
Ingredients
- 2 eggs
- 2 cups all purpose flour
- 1 3/4 cups whole milk
- 1/2 cup vegetable or canola oil
- 1 tablespoon white sugar
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
Directions
- Step 1 Beat all ingredients together in a large bowl until fluffy and smooth. Spray preheated waffle iron with non-stick cooking spray.
