In the south, school starts super early in August but gets out really early in the spring. As our summer winds down, and we transition to the back to school mentality, we typically have a last hurrah to celebrate! We were invited to a local back-to-school bash where everyone brings a treat to share. I wanted to make something simple, kid-friendly, and along the theme of summer. So I decided to throw together these awesome s’mores pops! The kids and I headed to the store and grabbed a couple of bags of marshmallows, a box of graham crackers, pop sticks, and dark chocolate chips. This is a quick and easy party treat for kids of all ages!
The steps are simple: melt chocolate, pulse graham cracker crumbs, dip marshmallows, and enjoy!
Melting the chocolate is the most time-consuming part of this recipe, but it really doesn’t take that long. Using a double boiler to melt the chocolate is my preferred method of choice, just because the chocolate melts evenly. A microwave is just as effective, but you have to be careful not to burn the chocolate and to keep mixing it in between cooking times.
For one bag of marshmallows, I recommend melting one cup of dark chocolate chips in the double boiler or microwave. Stir until the chocolate is a smooth and creamy consistency.
While the chocolate is melting, you can prep the rest of this assembly line. In a food processor, pulse graham crackers until they turn into a fine powder. If you prefer a more coarse texture, pulse for a shorter amount of time. Transfer the crumbs to a bowl.
Next, line a tray or a pan with wax paper. To assemble your pops to prepare them for the dipping, pierce a lollipop stick through the center of each marshmallow. This is a great fine motor activity for the kids to help with!
Dip the marshmallow in the chocolate and coat it as high or low as you’d like. I only went about halfway up the marshmallow. Make sure the marshmallow has just a coating and is not dripping with excess chocolate. Next, dip the chocolate covered marshmallow into the graham cracker crumbs.
Place each finished s’mores pop on the wax paper to allow it to cool and harden. Serve and enjoy!
