I don’t know about yours, but my kids LOVE pancakes! I got tired of making the box mix and buying the frozen kind because I wasn’t sure what was actually in them. Since I’ve been on more of a natural kick lately, I figured I’d try to find a semi-healthy recipe that I could tweak as needed. I make this batter at least once a week and use it every morning for my kids’ breakfast. The pancakes are so light and fluffy! Occasionally I like to “hide” some healthy stuff in them, like flax meal or flax oil, and my kids don’t know the difference. I’ve also played around with the ingredients, like substituting almond flour for some of the all-purpose flour, and coconut sugar for cane sugar. To keep things interesting, I tend to make different sized pancakes and add a variety of toppings for decoration. A fun trick is to use a cookie cutter in the frying pan and pour the batter in it so that it molds to the shape. These are even a huge hit with my in-laws!
Pancakes for a Prince or a Princess
Ingredients
- 2 Eggs
- 2 Cups All Purpose Flour
- 1 3/4 Cups Milk
- 1/2 Cup Canola Oil
- 1 Tablespoon Sugar
- 4 Teaspoons Baking Powder
- 1 Tablespoon Vanilla Extract
- Pinch of Salt
Directions
- Step 1 Beat all ingredients together until well blended.
- Step 2 Heat a frying pan with butter and cook until browned on both sides.
- Step 3 Serve with fresh fruit and maple syrup. Enjoy!
