Hi, I’m Tamar and I’m addicted to Trader Joe’s. There, I said it. When we lived on the west coast of Florida, the closest Trader Joe’s was 30 minutes from our house. On a good day. Without traffic. Which became a rarity. Luckily, my kids’ school was around the corner from it so I was able to satiate my addiction. Now that we’ve moved, the closest TJ’s is 15 minutes from our apartment and 2 minutes from my kids’ school. Yay! I love how the staff is extremely friendly and helpful and will offer recommendations of their favorite foods or new offerings, and they’ll tell you the best way to prepare certain foods. My kids love pushing the pint-sized shopping carts around the store, and the stickers and lollipops that they are spoiled with at the checkout counter.

I’ve been on a salad kick lately and I find that Trader Joe’s has the freshest produce around. One of my favorite things to do in the kitchen is to throw together a salad, depending on the mood of my tastebuds. I go through phases with dishes. Right now my go-to salad is my newest creation using all Trader Joe’s ingredients. It’s a great fresh summer salad that can serve as a lunch, dinner, or side dish that can double as a salsa. The flavors blend well together and there’s a nice mix of sweet and savory with a bit of a crunch. It’s very filling and provides a great serving of protein. If you eliminate the lettuce, the remaining ingredients make a great dish to bring to a BBQ or summer party. You can even scoop some up on the Trader Joe’s Longboard Tortilla Chips-my fave!

Ingredients
  • 1 Bag Trader Joe's Champs Elysees Salad
  • 1 Can TJ's Organic Black Beans
  • 1/2 Package TJ's Roasted Corn (frozen section)
  • 1/2 Package Grape tomatoes
  • 1 Avocado
  • 1/2 Cup TJ's Roasted Sunflower Seeds
  • 1/4 Cup TJ's Sweet & Spicy Mango Vinaigrette
Directions
  • Step 1 Toss all ingredients together and serve.
  • Step 2 For a salsa or side dish, eliminate the lettuce.
  • Step 3 Enjoy!
